Squash, Cheese and Macaroni Casserole

Ingredients:

1 cup sliced cooked squash
1 cup cooked macaroni
1 egg, beaten
1/2 cup whole milk
3 tbsp. salted butter
6 saltine crackers, crushed
1 small red bell pepper, chopped
1 cup of the best cheddar cheese
Directions:

In a medium bowl, combine cooked squash, macaroni, red bell pepper and cheese. Combine the beaten egg, milk and butter; stir into the squash mixture. Place the mixture in a one quart casserole dish. Top with crushed crackers. Bake at
350 degrees for 40 min. until golden brown. You can serve this with a salad and you have the perfect Summer dinner.
